We brewed this beer over a year ago with our friends from Brasserie Dunham. It features some Canadian base malts and wheat, and then an addition of local wildflower honey from Bee Silly, and locally grown lemon verbena from Feral Collective. It was then fermented in stainless with saison yeast, and brettanomyces. The beer was released as Latitude, we put a portion of this batch into red wine barrels for further aging. The result is Longitude, a dry beer with bright herbal lemon notes, and a funky aroma of oak vanilla, tea, and honey. Light bodied and very refreshing.
